If you're like me, you hate boxed mac and cheese. It's watery, bland, and uninspiring. You also probably have a kid that LOVES mac and cheese, and, quite frankly, using the box mix is always going to be way faster than making it from scratch every single time. So what do you do?

You jazz it up a little bit, that's what!

Every time I make mac and cheese, I doctor is up with things I already have stocked in my fridge because I have a three-year-old. It makes it taste better for adults and kids still LOVE it. Here's what you do:

First, grab your box of mac and cheese.

We buy this stuff in bulk from Costco. I like to pretend that the Aunt Annie's brand is healthier than the others, if only marginally. You can use the traditional elbow macaroni kind or get extra special and use the shells. My kid doesn't care, but I have friends whose kids will only eat elbow macaroni for whatever crazy, toddler-inspired reason. Go with what works for you!

Second, grab your brick of cheese.

All right, so you have your boxed mac, which is what you'll need to start off with. Next, you take that big ol' brick of cheddar you probably have already sitting in your fridge. I don't know many people who don't buy these regularly, so we're going to assume you have one!

Third, grab any of your snack cheeses.

If you have a toddler in the house, it's likely you have some kind of easy-to-grab, snackable cheese in your house. Whether it's the mozzarella string cheese or the babybel rounds, grab it! At our house, we always have string cheese and these amazing little round delicious things from Costco. I don't even know what kind of cheese this is. I just know that I LOVE IT.

For this recipe, I used both a string cheese AND a Costco round.

Note: I learned, the hard way, that the soft, spreadable snack cheeses (affectionally called 'cheese triangles' in our house) don't melt well and end up just kind of... globbing up your macaroni. Do not recommend. Brand examples are the Kerrygold wedges, Skinnycow wedges, etc.

Fourth, Grab your milk (and/or heavy cream) and butter.

A standard boxed mac and cheese usually calls for a couple of tablespoons of milk OR butter... But I usually add both and then throw in some heavy cream for some extra deliciousness. I highly recommend using at least milk and butter, but heavy cream makes it, well, creamier.

Fifth, grab some spices.

Salt and pepper are great staples, but you can also add a dash of paprika or cumin! Search your cupboard and decide what flavors tickle your tummy today! I usually stick to salt, pepper, and paprika, personally.

All right - it's time to put it all together

Now for the fun part... making your upgraded mac and cheese.

  1. Start out by chopping up your snack cheeses - one of each variety you have. For this, I used a string cheese and a Costco round.
  2. Grate or chop up approximately the same amount of cheese from your cheese block (1/2 cup is usually enough).
  3. Put all your cheeses into a bowl with about one tablespoon each of milk, cream, and butter.
  4. Sprinkle the package of powdered cheese from the boxed macaroni into the bowl.
  5. Mix it all together.
  6. Prepare your macaroni as per box instructions, then drain it into a colander.
  7. Put your cheese mixture into the same pot and stir it together over low heat until all the cheese is melted. If it's too thick, add more milk. If it's too watery, add more cheese!
  8. Spice it to taste with salt, pepper, and whatever else you want! I recommend paprika. Remember not to make it TOO spicy if your kids don't like spice, but mine are usually a huge fan of this combo!
  9. When the cheese mixture is melted and the texture you like, add the macaroni.
  10. Viola! 'Four Cheese' macaroni and cheese using snacks you keep on hand for your toddler!

If you really want to spice things up, you can also add browned ground beef or other meat to your mac and cheese! This adds some extra flavor and protein!
